Honey-Glazed Ribs 蜜汁排骨(一支骨)

Ingredients:

500g pork ribs, cut into pieces (about 5–6 cm)

90g water

1–2 tbsp maltose

Marinade Ingredients:

50g honey or brown sugar

10g garlic (minced)

1½ tsp red fermented bean curd (nam yu)

2 tsp peanut butter

½ tbsp oyster sauce

1½ tbsp soy sauce

2 tsp rose wine or Shaoxing wine (optional)

1 tsp cornflour

Steps:

  1. Mix the ribs with all the marinade ingredients until well combined. Marinate for at least 5 hours or overnight.
  2. Place the marinated ribs and 90g of water into the Cooven FoodEngine pot. Use the “Smartcook” P3 mode and cook for 20 minutes. Flip the ribs halfway through and stir well.
  3. Once cooking is done, continue with the automatic baking setting for 15 minutes. After 5 minutes of baking, brush the ribs with maltose for a more even colour, then continue baking.
  4. After another 5 minutes, flip the ribs, brush the other side with maltose, and continue baking until the surface is golden and slightly crispy.
  5. Remove the ribs and enjoy them while hot!

材料:

500克 排骨, 切块(5-6公分)

90克 水

1-2汤匙 麦芽糖

腌制材料:

50克 蜂蜜/红糖

10克 蒜瓣(切碎)

1 1/2茶匙 南乳/红腐乳

2茶匙 花生酱

1/2汤匙 蚝油

1 1/2汤匙 酱油

2茶匙 玫瑰露/绍兴酒(随喜,可省略) 

1茶匙 玉米淀粉

 

做法:

  1. 将排骨和所有腌制材料混合均匀,腌制至少5小时或过夜。
  2. 将腌制好的排骨和 90克水一起放入Cooven FoodEngine 锅中,使用 “Smartcook” P3模式,烹煮20分钟;烹煮至一半时翻面,搅拌均匀。
  3. 烹煮完成后,继续以自动设定,烘烤15分钟;烘烤5分钟后,可刷上麦芽糖后再继续烘烤,让上色更均匀。
  4. 再过5分钟后,可翻面再刷上麦芽糖,继续烘烤至表面焦脆。
  5. 取出烤好的排骨,趁热享用!
