Steamed Pork Ribs with Black Bean Sauce 豆豉蒸排骨

Main Ingredients:
500 g pork ribs, chopped into small pieces

Supporting Ingredients:
200 g yam, sliced
30 g cooking oil

Marinade Ingredients:
20 g soy sauce
20 g oyster sauce
15 g cooking wine
1 tsp sugar
1/2 tsp salt
white pepper powder, adjust to taste 
1 tbsp cornstarch

Ginger-Garlic Sauce Ingredients :
20 g minced ginger
15 g minced garlic
2 stalks spring onion (whites only), finely chopped
1/2 red chili, diced
10 g fermented black beans

Garnishing Ingredients:
spring onions, chopped

Tools:
a steaming plate

Preparation:
1. Combine pork ribs with all marinade ingredients. Mix well and marinate for 20 minutes. Set aside.

2. In a bowl, combine all ginger-garlic sauce ingredients. Select Cooker” mode, set temperature and time at 180°C; 3 minutes. Pour30 g of oil into the inner pot to heat up, then pour the hot oil into thebowl with ginger-garlic sauce mixture. Set aside.

In the same pot, arrange yam slices in it. Select Broil” mode, broilat 230°C with the air fryer lid covered for approx. 7 minutes or until golden. Remove and set aside.

Cooking Steps:
1.Insert a steam rack and add 2 liters of water into the inner pot. Select Steam” mode, set the temperature and time at P3; 1 hour, start preheating.

2. Mix half of the prepared ginger-garlic sauce into the marinated pork ribs.
3. Arrange yam slices on a steaming plate as the bottom layer. Spread marinated pork ribs on top, then cover with the remaining prepared ginger-garlic sauce.

Once preheated, place the steaming plate onto the rack. Steam for approx. 45 minutes or until the pork ribs are tender.
5. Remove the steamed pork ribs, garnish with chopped spring onions, and serve hot.

Tips:
– Recommended to use grill pot as the inner pot.

2. 一个碗中,将所有姜蒜酱材料混合均匀选择“Cooker”模式,设定温度和时间为180°C; 3分钟。将30克油倒入内锅中加热,将热油倒入姜蒜酱材料碗中,备用。

3. 再同一个锅中,将芋头片排入内锅中。选择“Broil模式,230°C焗烤约7分钟或直至金黄色。取出备用。

做法:
1. 置入蒸架并加入2公升的水至内锅中。选择“Steam模式,设定温度和时间P3; 1小时,开始预热。

将一半的备用姜蒜酱加入腌制好的排骨中,混合均匀。

3. 备用的芋头片铺在一个蒸盘上垫底,铺上腌制好的排骨,将剩余的备用姜蒜酱铺在排骨上。

4. 预热完成后,将蒸盘放在架子上,蒸煮45分钟或直至排骨软嫩。

5. 取出蒸好的豆豉排骨,撒上葱花,趁热享用。

贴士:
建议使用烤锅作为内锅。
