Nyonya Pongteh Chicken 娘惹豆酱焖鸡

Main Ingredients:
750 g Chicken whole leg; cut into pieces
300 g Potatoes; cut into chunks

Supporting Ingredients:
100 g Shallots; minced
30 g Garlic; minced
60 g Cooking oil
3 tbsp Tauchu (fermented soybean paste); minced
30 g Gula Melaka (palm sugar)
Water; as needed (enough to cover the ingredients; about 600 g)

Marinade Ingredients:
30 g Soy sauce

Preparation:

  1. In a mixing bowl, combine chicken pieces with soy sauce. Mix well and set aside to marinate for about 30 minutes.

Cooking Steps:

  1. Select the “Cooker” mode and set the temperature and time at 180°C; 40 minutes. Pour the cooking oil into the inner pot and heat for about 1 minute.
  2. Add minced shallots and garlic. Sauté for approx. 4 minutes until fragrant.
  3. Add minced tauchu and continue to stir-fry for approx. 2 minutes until aromatic.
  4. Add the marinated chicken pieces and stir-fry evenly for approx. 4 minutes until lightly browned.
  5. Add potato chunks and Gula Melaka, continue to stir-fry for approx. 2 minutes.
  6. Pour in enough water to cover the ingredients. Mix well, then cover with the glass lid. Adjust the temperature to 140°C and braise for 20 minutes, until the chicken and potatoes are tender.
  7. Remove the lid and continue cooking until the sauce reaches your desired thickness.

Tips:
– If the preset cooking time is insufficient, you may extend the time as needed.

  6. 加入适量清水,盖过食材,翻拌均匀后盖上玻璃盖。调整温度至140度焖煮20分钟,至鸡肉与马铃薯软嫩。
  7. 打开锅盖,继续烹煮至喜爱的酱汁浓稠度即可。
