Select \u201cCooker\u201d mode, set temperature and time at 180\u00b0C; 1 hour 20 minutes. Pour 20g of sesame oil into the inner pot and start heating for 1 minute. Add\u00a0smashed ginger and saut\u00e9 for approx. 3 minutes until fragrant.<\/p>\n<p>2. Add pork trotters and stir-fry for approx. 7 minutes, until the surface of the trotters is slightly golden.<\/p>\n<p>3. Add rock sugar, black rice vinegar, Tim Teng sweet vinegar, and water. Adjust the temperature to 240\u00b0C, bring to a boil, and skim off the scum.<\/p>\n<p>5. Adjust the temperature to 130\u00b0C and simmer for 50 minutes, or until the pork trotters are tender.<\/p>\n<p>6.
